When cassava is dried into a powdery or pearly extract, it becomes known as tapioca, although in India, the term “tapioca-root” refers to the cassava root from which tapioca is derived.
In terms of is tapioca paleo or is it not, tapioca would be considered paleo-friendly. It’s a safe starch that, while low in anti-nutrients, is also very low in any sort of nutrients whatsoever. It’s paleo friendly, though all you’re really getting from it is glucose.
Just stay away from the sugar-laden, HFCS-sweetened bubble teas and your tapioca gets the green light – though don’t be afraid of all bubble teas, a good fruit-based bubble tea can be quite spectacular :)
