We generally advise against consuming seed oils, but nut oils tend to be a little different. Yes, they’re still loaded with polyunsaturated fats (PUFA), but they also come loaded with antioxidants to help protect those fats.

Walnut oil is one such nut oil that has plenty of antioxidants, which protect the PUFAs from oxidizing. The antioxidants also confer a number of health benefits to us, including keeping inflammation low and boosting our immune system. Studies have even shown that walnut oil can be effective in preventing heart disease. Walnut oil is also an excellent source of vitamin K, which is essential for maintaining strong teeth and bones.
Paleo and PUFAs
Because of the high PUFA content, it’s best not to cook with walnut oil at high heats. Instead, keep it in a cool, dark place and use it only with low or no heat to avoid oxidizing those fragile PUFAs.
If stored and used correctly, walnut oil can be considered a smart fuel.
