One of the most important aspects to living a Paleo lifestyle is to eat plenty of fruits and vegetables. Because vegetables are lower in sugar, they are generally preferable to fruit, but there’s certainly a place for fruit in a healthy Paleo lifestyle.
Fruit Or Vegetable?
Zucchini is technically a fruit, but it is low in sugar and it’s hardly the only fruit to be eaten as a vegetable (tomatoes and peppers are other examples). Zucchini also comes loaded with vitamins A and C, various B vitamins, as well as manganese, magnesium, copper, potassium and phosphorous.
Because zucchini is generally available in both the summer and fall, Mark Sisson listed it as one of his top ten summer vegetables and one of his top ten fall vegetables.
