Happy pumpkin season! We all know when fall rolls around, because you start to see pumpkins appear everywhere, including this recipe. :)
I have to say, I was never a huge pumpkin fan. Pumpkin is typically used as a main ingredient in so many dessert recipes but I prefer to roast it or add pumpkin puree to my chili or use it in some kind of savory dish.


Truthfully, as a kid, I had really only ever seen pumpkin served as pumpkin pie on Thanksgiving.
The thing is, I think these raw pumpkin balls will give pumpkin pie a run for its money. These pumpkin balls don’t require cooking and they can be prepared very quickly. Plus, if you plan ahead and prepare them a few days in advance or even the day of because they’re that quick, you can share them with family and friends at a potluck or get together.
The first time I made these little guys, I had previously prepared a large batch of fresh pumpkin puree. If you’ve never made your own, I highly recommend you do. It totally beats the canned variety any day. :)
Previously, I had used quite a lot of pumpkin and way more dates than I would want anyone to consume, so when I remade a batch of pumpkin balls recently I also updated the recipe. I used flaked coconut in place of shredded and it made for a better consistency. Now, don’t assume this will produce a cake ball type dessert. These Raw Paleo Pumpkin balls are a little more wet but a fun little treat for kids or adults.
