Ground beef seems to go quickly, so when I make tacos I tend to load um up with additional fresh toppings. These Paleo Romaine Beef Tacos will have you returning for seconds and probably thirds.
A few weeks back I mentioned how Lava Lake Lamb was looking for help to update the images on their recipe blog. As soon as we got back from Miami I went grocery shopping and stocked up the refrigerator (I tend to clean everything out before we travel). Between stocking up the refrigerator and sleeping in my own bed, those are the two things I look forward to when we return home after being away.
This week I made the last two recipes that I volunteered to photograph, one of which was a braised lamb recipe. We finished off the braised lamb for lunch yesterday and I mentioned before how I’m not a huge fan of the braising process but it wasn’t all that bad this time around…especially since the lamb tasted so good!
After editing photos of food all day I can’t tell you how good it feels to wrap up this project. Plus, I’m pretty excited about seeing some of my photos on the Lava Lake website. :)
So if you just transitioned into eating Paleo and removing grains from your diet you might have thought you’d never have some foods again…i.e. tacos. Even if you don’t typically eat Paleo foods I’d highly recommend giving lettuce wraps a try. It’s not the only way you can enjoy a “shell” for your tacos but you’ll definitely benefit from the addition of more greens and the replacement of the corn or flour tortillas you may have previously had. In the past I’ve used Boston lettuce but this time I decided a larger “shell” was necessary and the romaine lettuce did the trick!
