Quick and simple Paleo meals aren’t hard to do. With two ingredients and some time spent off in the corner, you can have a whole week of lunches prepared from just one dish.

A Perfect Meal for Company

Having guests over doesn’t mean you have to slave over a hot stove all day in the kitchen. Throw this baby in the slow cooker and then go do some shopping, go for a hike, read a book, whatever floats your boat…maybe that literally means floating a boat!

This Paleo recipe makes enough to feed an army. Alternatively, you can start the slow cooker before you leave for work and come home to a fresh, homemade meal. If you’re dining alone or just feeding yourself and your significant other (like I typically do), the leftovers from this recipe can be eaten all week long.

A Simple Pork Recipe

Sometimes the best meals are the simplest ones. This recipe is a perfect example of that truth, as it combines a few simple ingredients to bring out the best that each one has to offer. The result is a juicy, flavorful piece of meat that can be tossed on top of a plate of greens or enjoyed next to a side of vegetables.

Choose Fresh Herbs For Flavor

Flavoring your food with herbs and spices is as healthy as it is delicious. In addition to the substantial nutrition provided by the pork, rosemary is rich in calcium, iron and vitamin B6, so don’t skimp on the rosemary in this recipe. Cover the pork shoulder in it and savor the wonderfully aromatic flavor that it provides.

And if rosemary’s not your favorite, don’t be afraid to use another fresh herb in it’s place.

Rosemary Pork Shoulder

Slow Cooker Rosemary Pork Shoulder

Ingredients

  • 6-8lb pork shoulder
  • coarse ground sea salt, to taste
  • coarse ground black pepper, to taste
  • fresh rosemary, chopped

Directions

  1. Optional first step! Season the pork shoulder with sea salt and black pepper and brown in a large skillet over medium heat on all sides.
  2. Transfer the pork shoulder to a crock pot. (If you did not brown on all sides, now season with sea salt and black pepper.
  3. Scatter chopped fresh rosemary over the top and sides of the pork shoulder.
  4. Cover crock pot and cook on high for 8 hours, or until tender.
  5. Serve whole, sliced or shredded (use two forks to shred the meat). Or transfer meat to a glass storage container when cooled and store in the refrigerator for later use. Serve over a side salad or with a side of baked sweet potato or your favorite vegetables.
  6. Enjoy! :)
