Always be wary of anything labeled “superfood”, but if we can call anything a superfood, it would be the kale, chard, and eggs in this Paleo breakfast.

Swiss Chard and Kale have become the new superfoods. All health nuts are eating them, but is this just another case of conventional wisdom creating hype without anything to back it up?

Not this time. If conventional wisdom got anything right, it’s that eating lots of vegetables is really good for you. Leafy greens are chock full of nutrients and antioxidants. The darker the better, because the color is an indication of the presence of nutrients and antioxidants, and kale and swiss chard are about as dark as you can go.

Kale is the most nutrient-dense plant available to us and swiss chard isn’t far behind. They both come loaded with vitamins A, C, E, K and various B vitamins. They’re also packed with minerals, including calcium, magnesium, potassium, iron and manganese.

There’s more to a healthy diet than eating plants though. Eggs have long been considered a breakfast food with good reason. They’re rich in all sorts of micronutrients, including calcium, iron, selenium, and choline, not to mention a healthy dose of fat and protein.

There’s no better way to start off your day than with these nutrient powerhouses.

Paleo Breakfast Sautéed Greens and Nested Eggs

Paleo Breakfast: Sautéed Greens and Nested Eggs

Yield: 2 Servings

Ingredients

  • 1 tablespoon grass-fed butter or your choice of fat
  • 1 onion, chopped
  • 1 bunch organic rainbow swiss chard, sliced
  • 1 bunch organic lacinato kale, sliced
  • dried marjoram, to taste
  • turmeric, to taste
  • coarse ground sea salt, to taste
  • garlic powder, to taste
  • 4 large organic eggs

Directions

  1. Melt butter (or your choice of fat) in a 10.25 inch cast iron skillet over medium heat. Add onion and an overflowing handful of swiss chard and kale. Let the greens cook down and add the remaining greens to the skillet. Season with marjoram, turmeric and sea salt. Sauté for several minutes, until greens are wilted.
  2. Use a spoon to push the greens aside and create four wells. Crack an egg in each well.
  3. Reduce heat to low and season the top of the eggs with turmeric, sea salt and garlic powder. Let skillet sit while eggs cook. To speed up the process, place a lid on the skillet and cook until whites are opaque.
  4. Use a spatula to transfer the greens and eggs from the skillet to a plate and serve.
  5. Enjoy! :)
