Roasted chicken doesn’t have to be boring. Add some nutrient dense chicken liver to the stuffing and serve it smothered in Paleo BBQ Sauce for a divine dinner.

Chicken is great because it’s cheap and extremely versatile. Even organic, free range chicken can be found for a reasonable price if you know where to look.

This chicken recently came in our meat CSA. When I was preparing the chicken, I opened it up and found a packet of goodies inside including the chicken heart, chicken liver and chicken neck.

I added the neck to the exterior of the dish and cooked it alongside the whole chicken then chopped up the heart and liver and combined them with some vegetables for my stuffing.

Seasoning Your Bird

Once you’ve chosen your bird, you can flavor it with your favorite seasonings and coat it in your favorite fat to provide a crunchy exterior.

Because chicken is so easy to cook, once you’ve stuffed it, you can just pop it in the oven and move onto something else. Whether you’re finishing your favorite book or preparing something tasty to serve as a side dish, this recipe makes it easy for you to multi-task once the bird is in the oven.

Dress It Up With Homemade Sauce

You don’t have to make your own BBQ sauce for this recipe, but we do recommend it.

While store-bought condiments are certainly convenient, they usually come packed with all sorts of questionable ingredients, including vegetable oils and high-fructose corn syrup.

Making your own is quick and easy and provides the peace of mind that comes with knowing absolutely everything you’re eating.

And if you’re not a fan of spicy sauce, you can adjust the amount of seasonings you add, to adjust for your own palate.

Stuffed BBQ Paleo Chicken

Stuffed BBQ Paleo Chicken

Yield: 2-4 Servings

Ingredients

  • 2.5lb pasture-raised whole chicken
  • chicken liver and chicken heart, chopped
  • 2 carrots, peeled and minced
  • 2 celery, minced
  • 1/2 small onion, minced
  • 1/2 green bell pepper, minced
  • 2 cloves garlic, minced
  • a hand full of fresh thyme
  • coarse ground sea salt, to taste
  • coarse ground black pepper, to taste
  • 1-2 tablespoons bacon fat, melted
  • 1-2 cups Paleo BBQ Sauce

Directions

  1. Preheat the oven to 375°F.
  2. Lay chicken in an 8x8 glass baking dish. Empty cavity of contents.
  3. In a large mixing bowl combine chopped liver, chicken heart, carrots, celery, onion, bell pepper, garlic and fresh thyme. Season with sea salt and black pepper and stuff everything into the chicken cavity.
  4. Pour bacon fat over entire chicken and transfer dish to the oven.
  5. Bake for 45 minutes, uncovered. Baste the bird with the liquid bacon fat and cook for another 15 minutes or until internal temperature registers as 165°F.
  6. Remove chicken from oven. Carve and transfer pieces to a plate along with a serving of stuffing. Serve chicken and stuffing with Paleo BBQ Sauce on top.
  7. Enjoy! :)
