This soup is a perfect side dish to accompany your Paleo dinner. There’s no sugar, but it’s so naturally sweet and creamy, you might want to save this one for dessert. ;)

White potatoes may not be on your Paleo menu (depending on your carbohydrate needs/tolerance), but thankfully, there’s always sweet potatoes.

Sweet potatoes are an excellent source of “slow carbs” – carbs that don’t provide a massive spike in blood sugar, which is why sweet potatoes are often considered Paleo-friendly even when white potatoes aren’t.

Sweet Potato Paleo Soup

Embrace Your Slow Cooker

The best part about this soup is how easy it is to make.

With so few ingredients, all you have to do is throw them in the slow cooker, set your dial for a few hours and dinner will be ready shortly thereafter, with enough leftovers to last you several meals.

Once the sweet potatoes are nice and soft and full of all the delicious flavors they’ve been stewing in, just blend them all together and you’ve got one delicious Paleo soup!

Great For Group Gatherings

I prepared and served this soup as one of my sides for Christmas dinner. It’s also perfect to bring to a potluck or just to cover many meals throughout the week.

Sweet Potato Paleo Soup

Yield: 6 quarts soup

Ingredients

  • 2lbs sweet potato, peeled
  • 2 teaspoons dried thyme
  • 2 (13.5 oz) cans unsweetened full-fat coconut milk
  • 1 cinnamon stick
  • a pinch of coarse ground sea salt

Directions

  1. Peel the sweet potato and chop into thirds. Add to a 6-quart slow cooker.
  2. Add dried thyme, coconut milk, cinnamon stick, pinch of sea salt then cover everything with water. (Note: You want to add enough water to fill your crock to the top. Be sure to save just a bit of space. Just in case it boils, you don't want it to boil over!)
  3. Add the lid and cook on high for 3-4 hours.
  4. Remove and discard the cinnamon stick.
  5. Use an immersion blender (or carefully transfer ingredients to a blender) to liquify.
  6. Ladle soup into a bowl, top with a shake of dried thyme and serve.
  7. Enjoy! :)
