Nothing beats the combination of a juicy tomato with a smooth, rich avocado. Throw in some onions, lime, and cilantro and you have a salad that’s anything but boring.

Not Your Typical Salad

When most people think of salad, they might think of the lame, flavorless house salads so many restaurants offer. Made out of ice berg lettuce and topped with enough dressing to distract you from what you’re eating. No wonder so many people have bad associations with salad.

Luckily, we’re here to help!

When vegetables provide such a wide array of nutrients and flavors, there’s really no excuse for the standard “house salad”.

Instead, you can make your own salad in the comfort of your own home and get the satisfaction of knowing exactly what’s going into it.

This salad is so tasty, it doesn’t even need dressing. Just marinate the onions for a few minutes, top the whole thing with fresh herbs and you’ve got an appetizer (or side salad) to beat anything a restaurant can offer.

Tomato and Avocado Salad

Tomato and Avocado Salad

Yield: 8-10 Servings

Ingredients

  • 1 sweet onion
  • 2 limes
  • 1 tablespoon extra virgin olive oil
  • 3 avocado
  • coarse ground sea salt, to taste
  • coarse ground black pepper, to taste
  • 2 beefsteak tomatoes, cut into wedges
  • fresh cilantro, minced

Directions

  1. Thinly slice the onion into rings and transfer to a medium mixing bowl along with juice from one lime and olive oil, toss to combine. Marinate onions for 20 minutes.
  2. Peel the avocado and cut into 1-inch chunks. Mound the avocado chunks in the center of a serving platter. Pour the marinated onions over the avocado and sprinkle with sea salt and black pepper.
  3. Place the tomato wedges on top, followed by fresh cilantro and garnish with lime slices or quarters from second lime.
  4. Enjoy! :)
