OK, so tomatoes and cucumbers aren’t vegetables. Technically, they’re both fruits, but they’re both low on the sugar spectrum and really high on the “good for you” spectrum so we can make delicious, nutritious salads out of them.
Super Quick Mid-Week Lunch
If you think you don’t have time to make a salad, this recipe is going to prove you wrong once and for all.
The only thing you have to do is chop up the tomatoes, cucumber, onion and basil, then mix everything together and voîla! You have a healthy side dish or full salad to eat for lunch.
P.S. I prepared a salad with much more than seven ingredients while we were on the road, so here’s a tip for ya… Pack all the whole ingredients, a mini container of olive oil, a small cutting board and a chef’s knife in a large mixing bowl and you can then prepare this meal absolutely anywhere.
Travels Well For Parties
Salads are great for barbecues and potlucks.
They’re easy to transport and they’re a sure way to bring something you can eat without being “that person”.
Summer is high barbecue season and even your SAD (Standard American Diet) friends will appreciate having some vegetables to balance out all the meat and BBQ sauce they’ll be consuming.
Because this dish is so quick and easy to throw together, you’ll have time to make it for that spontaneous pool party your neighbor just threw. If you don’t feel like sharing, it can also serve as the perfect snack to hold you over between meals.
