I feel like pickled eggs get a bad rap.

Like when you see a scene of a movie showing a jar of eggs floating in some eewy-gooey dark liquid sitting on a bar and then some guy takes one egg out and assumes he can eat the whole dang thing in one full swoop… hmmm, maybe that’s just my imagination.

Seriously though, that’s the mental picture I gather when pickled eggs are mentioned. But not anymore! After trying these Turmeric Pickled Eggs I have a new mental image when it comes to pickled eggs and also a new recipe for a delicious go-to Paleo snack.

I had never pickled anything prior to this.

Turmeric Pickled Eggs

If you only cook eggs a couple different ways you’re totally missing out on all the possibilities.

I have used eggs in all different ways and I will have a whole host of egg recipes in my next cookbook…but more on that later. :)

This recipe is sure to be a great snack you can prepare once and have around the rest of the week.

The Power of Turmeric

A while back, Mark wrote all about the health benefits of turmeric. To give you a glimpse into some of what he said, “turmeric has shown promise in treating and preventing Alzheimer’s disease and it has improved insulin sensitivity and blood glucose levels in rodent models”. Turmeric Eggs

This recipe requires you to first hard boil and peel the eggs so don’t skip reading the ingredients section before diving into the recipe.

Look at those beautiful, golden eggs! They’d make a great food gift for someone celebrating their golden birthday. :)

Turmeric Pickled Eggs

Turmeric Pickled Eggs

Yield: 8 Pickled Eggs

Ingredients

  • 1 cup organic apple cider vinegar
  • 2 4-inch pieces of fresh turmeric, peeled and thinly sliced
  • 2 jalapeño peppers, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 2 teaspoons yellow mustard seeds
  • 1 tablespoon sea salt
  • 1 cup water
  • 8 eggs, hard boiled & peeled

Directions

  1. Bring the vinegar, turmeric (you can use 1/2 teaspoon of ground turmeric if you don't have a fresh piece), jalapeño peppers, garlic, mustard seeds, sea salt and water to a boil in a small saucepan over medium-high heat. Stir everything until the salt is dissolved. Remove the saucepan from the heat and let the brine cool to room temperature.
  2. Put the eggs in a glass container, such as a mason jar, or something that will hold all of them comfortably.
  3. Pour the cooled vinegar mixture over the eggs and push them down to submerge. Cover and refrigerate everything for 2-4 hours so the eggs can infuse the color and flavor.
  4. When you slice the eggs in half you'll find a golden ring on the outside. If you'd like the golden color to flow all the way through to the yolk you can leave them in the brine for 24 hours or longer.
  5. Transfer the eggs from the brine to a new container. You can keep the eggs in a covered container in the refrigerator for about a week.
  6. Serve the turmeric pickled eggs as a snack or appetizer or simply add them to your salad.
  7. Enjoy! :)
